Unit One
is an overview of grains. It discusses planting and harvesting terms,
milling, and the differences in end products. It contains a diagram of
the new food pyramid and a brief discussion on the importance of grains in
our diets. There follows a spelling list, suggestions for projects in
writing, reading, cooking, art, analysis, and a field trip.
Unit Two
covers only one grain: Rice. There are some 46 kinds of rice defined
(briefly). Short descriptions of rice paddies, rice history, and rice
in poetry are included. Learning ideas include: math problems, haiku
poetry, researching two American Indian tribes, vocabulary, a table for some
science experiments, and a simple recipe for Spanish rice.
Unit Three
develops the relationship between wheat, rye, Kamut, triticale, and spelt.
It gives a brief history of where some of those grains are believed to have
originated. Included is a recipe for Kamut Pizza, rye bread reuben
sandwiches, and spelt crackers. There is also a discussion on how to
sprout triticale for use on salads, etc., along with several science
experiments to do with those same sprouts. Learning ideas: a spelling
list, researching the importance of pyramids and a related writing
assignment, and several suggested reading books.

Unit Four
discusses Barley, Oats, Buckwheat and Flax. Some very interesting and
fairly new research is included regarding flax and the importance of some of
its properties. Recipes are included for making beef barley soup,
breakfast oat granola, and buckwheat kasha. Spelling lists are provided.
Geography projects are included for the Himalayas, Russia, and Eastern
Europe. The math idea asks the student to calculate how much linoleum
would need to be purchased for a kitchen and hall project. A writing and
research project is suggested for cholesterol.

Unit Five
covers Corn, Amaranth, Quinoa, Millet, and Teff. Several varieties of
corn are discussed, and directions are given for making a corn husk doll.
Definitions of open-pollinated and hybrid varieties are given.
Deresination and pseudocereals are defined. A fruit dessert is
included for quinoa. Spelling lists are included. Projects
include using an atlas and a world almanac, writing an analysis paper, doing
research on the Aztecs, and figuring some math.
